Collagen peptides vs. gelatin: how are they different?
They come from the same protein family. The key difference for your kitchen is what processing does to the powder: gelatin can set into a gel; collagen peptides are made to mix more easily into drinks.

Looking for collagen peptides in a daily powder?
Our label lists bovine and marine collagen peptides alongside undenatured Type II.
Same collagen family, different behavior
Collagen is processed into different forms for food, supplements and other uses. Gelatin and hydrolyzed collagen peptides are related, but their properties differ.
The original structural protein found in animal connective tissue.
Processed collagen with a useful ability to thicken and form a gel.
Further broken into smaller chains for use in powders and other foods.
The route and exact processing can vary by manufacturer. Read the product description and directions. A powder called “collagen” may not be the same preparation as a product labelled “gelatin” or “collagen peptides.”
That difference is practical. Gelatin is useful in foods where a set texture is wanted. Peptide powders are commonly used in drinks and recipes where a gel isn’t the goal. Solubility and texture can still vary by product, temperature and instructions.
Choose the format that fits the way you’ll use it
| Question | Gelatin | Collagen peptides |
|---|---|---|
| What is it? | Collagen processed into a gel-forming ingredient. | Collagen processed into smaller peptide chains. |
| What does it do in food? | Can thicken or set foods as they cool. | Often used in drinks and recipes where a gel isn’t wanted. |
| What should you compare? | Source, serving amount and recipe directions. | Source, serving amount, preparation and full ingredient list. |
| Does the format prove an outcome? | No. Food texture doesn’t prove a health effect. | No. “Peptides” alone doesn’t establish a product’s results. |
Don’t use “peptides” as a shortcut for a stronger product. The amount, source, preparation and evidence all matter. If a formula combines ingredients, check which amounts are listed separately and which are grouped into a blend.
What More Than Collagen uses
Our facts panel lists a multi-collagen blend with bovine collagen peptides Types I and III and marine collagen peptides Type I. Undenatured Type II is listed separately. That puts peptide collagen and a different collagen preparation in the same formula.
The pouch lists 26 servings at 5 g or 13 servings at 10 g. Separate amounts for the bovine and marine parts of the blend aren’t shown. Use the package directions when preparing it.
